What this wine tells us
Another of the great sweet wines from the Canary Islands, even though less well-known because of its limited production and the winery’s preference not to commercialize it immediately but rather to store it for a while to let it mature. A wine that is always surprising because you don’t know how long it has aged, nor when it is going to be best: it is always evolving. Neither too sweet, nor too intense, the bouquet is reminiscent of cacao, carob, and aromatic herbs; on the palate, it is delicately sweet, light, and easy to drink, but with a lasting and pleasant finish.

Its dancing partner
Delicious with aged vinegar chocolates.

Trivia
It honors the father of the current owner/oenologist. As Felipe told us, it is a historic wine that was always available in the winery in case other wines needed to be enhanced with a touch of sweetness.
