What this wine tells us
This wine reflects La Palma’s wine history to perfection; a vintner’s fruit, a special environment, and resources result in this traditional mountain wine. It’s part of what is called “El Alto Norte,” that is, the strip from Tijarafe to Puntallana. It’s not for us to judge whether its resinous flavor, its aromas of fresh and aromatic pine tree, or its light flavor with a very pronounced pine-tree aftertaste are more or less pleasant: that depends on the palate, but there is no doubt that you should try it at some point.
Its dancing partner
Fabulous with well-spiced goat meat.
Trivia
The 15 days that it is kept in a 200-year-old, 800-liters pine tree barrel gives it a wooden touch that transforms this wine completely.
