What this wine tells us
Flawless image and presentation, it is, without a doubt, an original wine that reflects accurately the diversity of the territory and its people. The color is slightly golden, but with a nice brilliance. The carbonic anhydride flows slowly and is well integrated. Very faint aromas of oxidation, some nuts and mature apple, but nevertheless subtle and sweet. Its main virtue is on the palate, where it presumes of a fine bubble, the wine’s perfect companion. It is tasteful, almost saline, and goes very well with fish or nuts.

It is a must with “bacalao encebollado” (cod prepared with onions and tomato)
Trivia
2007 is the year that is on the market at the time of the edition of this book (late 2014)! Who would have known that a sparkling Listán would still be alive in the bottle so many years later, even though only very few bottles are available. If you happen to come upon one and are curious, try it out.
