What this wine tells us
Another jewel of the wineries from Lanzarote are the sweet wines. The climate works in his favor and succeeds to dry grapes and turn them into raisins under ideal circumstances in order to make great wine. In this case, the grapes dehydrate on the plant, and by that the fruit keeps absorbing the nutrients from the soil through the plant, at the same time as it looses water and concentrates its must. More flavor and less liquid (water?). Its aromatic deepness is complex, showing rich aromas of menthol and fennel; on the palate it is delicate, powerful and very lively.

Trivia
There are only about a hundred bottles of this wine each year that are extracted from a solera that the winery owns since 2005. That is how they achieve continuity and keep increasing its quality in the following seasons.
